CAKES, GENERAL

When making cake batter, be sure to scrape down the sides of the mixing bowl, and blend the batter each step of the mixing process. This is to ensure a thorough blending of all the ingredients in the final batter.


A high ratio cake is one in which the sugar weighs more than the flour. This is difficult to do without some of the better flours that were not always availiable. The stories of a slight bump or vibration causing the cake to fall came from this problem.


Use 1 pound of icing for each 2 pounds of cake batter for the finished product.
