COOKIES


COOKIES, GENERAL

Unless otherwise stated, cookie sheets should be very lightly greased.

Always bake a sample/test cookie first so corrections or modifications can be made to the remaining batter or dough.

When baking, use 3 cookie sheets and rotate so the cookies are placed on to a cool cookie sheet.

With a rolled out and cut cookie, always bake with the side with the most flour down.

Soft cookies should be stored bottom to bottom, and layers separated by wax paper.

Turning over on sugar was used to put sugar on some cookies. The entire pan (or paper) was turned upside down onto a layer of sugar. The cookie had to stick to the pan (or paper) so it could be turned right side up for baking.

         To modify your cookie dough if your sample bake-off indicates that it would be desirable:

For more definition, use more bread flour (you can decrease the pastry flour accordingly the next time).

For less definition, add more liquid (in a batter), or sugar (in a dough)
